Greek Tuna

This tuna is yellow tail and was approximately 40kilos. I purchased it from my local fisherman and quickly prepared it with the help of my Sensei Takahashi sama. This is a good example of what is available in the Aegean seas. The tuna was very good and we fermented the fish for 2/5 days enjoying throughout. The cheeks we marinated and grilled to perfection.
