The photo below is a good demonstration of truffle facade, which is “make-up” for truffles. The idea sounds crazy and my friend George is surprised that in Alba they dress up truffles the truffles to give a better impression. It is hard to believe but not something that surprises me.

When it comes to truffles you need a reliable source in order that you are not taken advantage of and finding that source is a difficult as locating the real truffles. The buying of truffles is more and more complicated given there are easy techniques used to enhance flavor, i.e. chemical oil. There are more than 300 varieties, all either black, summer or white, and all are rare. Their qualities, scent and flavor vary enormously and that is what makes it all exciting.
