This makes sense or does it? I think it does as it is a twist to serving truffles and egg. I admit I don’t enjoy the egg alone with truffles unless there is flavor contrast. In this dish you taste the contrast and the truffles accent the dish giving it the power and balance needed. I would re-try this using a slightly different technique to gain more clear flavors by using different frying techniques. Interested?
