Lets begin with what not to do when enjoying white truffles. Firstly, no olive oil ever or you’ll spoil the taste. Olive oil is far too heavy and it causes a negative reaction with white. The only viable way to experience the aromas, and the taste is to use a butter base. Take any type of classical noodle, (freshly made) and simply keep it free of oil. Use butter and if salt is required mix it well in advance. The fat in butter enhances the background of the truffles. It becomes obvious that enjoying truffles is mostly in the aromas and any food substance that interferes with the truffles should be avoided. Always use a simple mono fat as the background.
