I cannot think of another way of putting it, except ugly and ridiculous. The way we are going is getting more and more absurd. Why hasn’t someone told Moto that cones are for ice cream parlors and have no place at the table in a metal holder.

There is something funny about it, and something not so funny. Creativity in cuisine has become more about bad humor, and that leads to bad taste.

What about natural processes, and balancing and preserving the necessary traditions while using food science to enhance taste.
