Pasta Fresca

There is nothing like fresh tortellini filled with local ground meat and herbs, or just fresh ricotta. The skill in rolling the pasta takes approximately 15 minutes per kilo ball. The recipe is 10 eggs and one kilo of flour. The next thing is, roll it by hand and get the thickness to perfection. The perfection is experience and you need many years to learn the skill to a perfection.
