The sublime, the ultimate in finesse are the finishing touches of freshly made Anago, sea eel. At the 7 seat counter, we are just two. The lunch slowly makes an end and symbolically the sweet tones are served to satisfy the palate. Some insist to serve Tamago, while others will finish without it, and satisfy their clients with a soft local sea eel.
The taste is coated with a reduction of sea ell broth reduction. This is created when the sea eel has been simmered over low fire for at least a day. The developed honey hues and sweetness remind us of a sweet yet savory sauce.
There is no place on earth where you can get this perfection, except for Mr. T.
