Alum et Uni

Like it or not Alum is used to firm ‘uni’commonly referred to as sea urchin. The chemical process has been used for many years and is common in Chinese jelly fish. The alum adds a preserving type of quality that is necessary unless you eat the uni almost within a few days. Pictured here is uni that s not preserved but anyway I prefer alum given I consume more pollution and radiation from flying or visiting my dentist.
