Handpicking, and rigorous sorting it sits in concrete tanks for 10 days, after crushing, maceration and fermentation without adding yeast and without temperature control. A dirty nose, excitement, passion and keenness of the Domain Pegau’s 2005 cuvée Laurence. The wine needs decanting, time to aerate and get back to earth. It accompanies the meat dish at the Park hotel, where I shared this wine my wife. The animal in the 2005 is dominating and some would find it overwhelming but in the end it is balanced by nature and expresses a concentrated prune and spicy black currant. The finish is smooth yet long.
