Ever since Didier passed away in 2008 and his son Louis-Benjamin has been making the wine. A southern Loire Valley wine, “Sauvignon” Blanc Pouilly Fume 2009, grown on flint, a wine that has immense minerality, a crisp acidity, jumpy fruit. I let it for 24 hours and it calmed down, and was drinking much better, a creamy smoothness and better balance. This is a very enjoyable food wine with the character of its origin.
