A man’s meal in Australia staying at a friend’s home, I had a chance to buy some Australian Rib eye. The local butcher, Boatshed Market sells aged Australian beef. Bone in, I added some flavor by de-glazing the beef and spinning it in a roasting pan over gas.
It was rare and chewy, after crushed black pepper, sliced shallots, sliced garlic and a dab “up and down” of fleur de sel.
