The beans I enjoy to use are Risina “Fagiolo di Spello” and they are from Umbria. You can visit their farm and stay in luxury or order their beans. They are really very good and worthy of the effort. The farm steer itself to the cultivation of Umbrian central Italy variety, the ecotype of Castelluccio (Norcia) for lentils, Cocco Bianco and Risina for the beans. This choice is to safeguard the survival of ancient local rustic they have not been selected to maximize the harvest and but they are very rich in flavor and taste therefore suitable for organic agriculture. At the present the 85 hectares of Cuore Verde’s farm is totally organic.
