

It isn’t often you taste a food that you’ve never seen or heard of before. I am a little embarrassed to admit it, the “lady veiled” mushroom, named Phallus Indusiatus, is most unique. This mushroom was discovered in the late 18th Century by a French botanist. It grows up to 25cm long, the body looks like a fishnet stocking. The mushroom’s compounds are said to be medicinal and it is said to date back to 7AD, used in Chinese medicine. It is served here without the cap, wrapped up around asparagus and in a Chinese broth. A sliver of pork is added to give it some contrasting flavour and a dash of Chinese shoyu.
