Brown and gooey Palm sugar is found throughout South Eastern Asia and is used to sweeten almost everything. Produced by tapping the sap from the inflorescence of the tree and boiling it down to produce a syrup. For those of you who have never heard of the inflorescence of the palm tree, it consists generally of the fleshy spikes.
