This chef is diligent, disciplined and has a clear idea of what he wants to achieve. He is modest and speaks very little, and you can imagine, it isn’t easy for a chef who works opposite clients.
This is a short clip of Matsukawa cutting some Tai for our next course. He is a very skillful chef with a good perspective – Bravo!
PS: you can always tell a good meal, it happens when the next day you think about the experience, aromas, foods and tastes – they permeate your mind.
