Matcha

Green Tea foam, nutrition and tradition is what Matcha is about.Made from shade-grown leaves also used to make gyokuro, a high grade green tea. The preparation of matcha starts before harvest when the tea bushes are covered to prevent direct sunlight. This slows down growth, stimulates an increase in chlorophyll and makes a darker shade of green.

A small amount of matcha is placed into the bowl, traditionally using a bamboo utensil, a chashaku, and then 80°C water is added. The mixture is then whisked to a uniform consistency, using a bamboo whisk known as a chasen.
