We lived in Paris on and off for 12+ years and tried many types of bistros all over the town. These days you are hard pressed to find a classic bistro where the foods are still being made on the premises. The 35 hour work week ran most good bistros into the ground and many turned to Metro for ready-made foods.

Even in Japan, the old-fashioned 1980’s bistros have faded away with the generation of bubble minded Japanese disappearing. There is nothing to compare to the feel of a classic bistro, when you walk in and sit, it hits you. The ambience is the right word, it takes you back in time and warms you from the inside out and feeling you only get here.
