Alum Uni Texture

Many sushi lovers have no idea that some fish are treated chemically. In most cases the presentation and preservation of the roe is necessary for travel. Uni (sea urchin), it is often treated with Alum, a chemical agent to help preserve Uni, and give it consistency and hardness. This Uni is from Hokkaido and has no treatment at all – you can see the difference in the texture.
