A very interesting wine, Jean-François creates a natural wines, all de-stemmed by hand, and minute doses of sulfur. He curbs this issue entirely by aging many of his whites on the lees for extended periods of time, anywhere from two to eleven years.
The wine is what you’d expect, yellow and mellow and after some time it opens up into a charming white wine, smooth and rich.
