The idea that a chef would demonstrate what he does seemed fine I think. The idea that we would be show us how he works seemed interesting. We are always keen to see technique and learn the ins/outs of a well seasoned chef.
First of all the chef is very passionate and understand his tools, many of them we had seen and some we had not. Denis seems more like a biker, a gold earring on a husky guy, he rides his Harley to and from Piedmont where his wife lives.
What I like about Denis is his sense of humor but I wasn’t sure where it begins and ends. On each table he has a “cow box” you turn upside down and it moo-moo-mooz like a cow. Each moo is returned with a moo back, his staff have their own “cow box”. Our guest kept saying it doesn’t sound like a cow :-).

The chef has a curious sensibility, a charm to talk about what he does best. I had the feeling that he lives in his own molecular vacuum surrounded by his own molecular dreams. I just wonder how he can live within and between molecules, and after his meal I realized that this is a show.

The dinner is named evolution a molecular feast with some dishes astonishing, while others are proof that using molecular cuisine is unsatisfying and perhaps weird.
