Cleaver Tarama Tothalassaki

I recall being in an Arab village near the west bank en route to Jerusalem. Restaurant Babayit Shel Rafa serves hummus with raw onion and you use the onion piece by piece to spoon the hummus. This is a simple place, a poor village without much infrastructure and life there is pretty mundane except for babayit.

This time its black Tarama a cleaver twist to an old favorite of many fishermen from the Aegean and surrounding seas. This tarama is colored with squid’s ink and topped by raw onion. The onion is used in numerous cultures as a spoon and this time it works perfectly.
