This was one of my favorite dishes this summer, fresh soupia slow cooked in a pan over low heat; garden fresh tomato, the black ink colors the dish, and fresh herbs in olive oil and hot pepper expand the taste – a simple yet perfect combination as the tomato’s seeds ooze out onto the plate, the acidity sharpens on your palate, as the crunchy soupia grabs hold in between your teeth, and tentacles roll around over your tongue tickling.
