A skinnier relative of the parsnip, salsify is a delicious, versatile winter vegetable, which belongs to the dandelion family. Here it is cleverly prepared by David Toutain (in Paris) to simulate a branch, and you have a nice accompaniment of white chocolate and parsnip.
