One of the best little squids. There isn’t much to do and no massage as Jiro claims. This is a small domestic caught squid that is soft and slightly crunchy but not in any way comparable to awabi.
Ika squid is very popular in Japan and there are about 130 species living in Japan. Most commonly kinds used in sushi in are “Sumi ika”, “Yari ika”, “Aori ika” or “Surume ika”.
