These old-fashioned Japanese only restaurants are found in the bowls of the old parts of Tokyo like Asakusa. I think this is something out of a 1950’s movie, fish wrapped in cellophane and mixed together with a smorgasbord of other off looking fish. I am not sure why chef’s do this, but I guess it’s an old-fashioned way of keeping fish fresh. I guess old minds, old fish and old people all go together.
