I was very surprised to see meat in Japan sold at a “premium meat counter” that had been tenderized with a Jaccard. Not a very nice surprise once I got home, and I am sure clients are not aware of this practice.
This was a first time I’ve seen this ever in Japan, and luckily not from my usual meat supplier. Beware at Tokyu in Shibuya-Ku, and be cautious at department stores when purchasing meat that is wrapped in plastic.
The supplier was Asakusa Imahan: http://www.asakusaimahan.co.jp/english
