Saba Bien |Sashimi|

In Japan it is mainly called “Saba” is mainly caught off Oita, Saga Prefecture, although quite a few are caught off our coasts, especially off Yaizu in Shizuoka prefecture.

Writing about sushi, or in this case sashimi is boring compared with tasting it. This Spanish mackerel is at the top of the season, cold waters provide for the best flavors in blue fish. Recently the seas in and around Japan were very choppy and the waters murky. This doesn’t help for good fishing, despite the growing demands for domestic fish served at the high-end sushi counters.
