I tried this sake at a dinner recently and the sommelier suggested it was 73% polished which means it’s very polished and with only 27% of the grain remaining.
This is considered high (high) end sake and while I enjoyed it, I couldn’t say it was memorable. Perhaps it was the oversized ceramic cup it was served in, I guess so because a delicate sake benefits from a smaller volume.
