Found deep in the seas around the coast of Japan, they live mostly on sandy bottoms, and feed mainly on small crustaceans and small fish. This silver fish are among the very best in Japan, small in size with a shiny skin, the interior flesh is sweet and dense in flavor. Served with some small sliced green onion and ginger, it’s a perfect combination.
