Kakiage Tenmori |Soba|

I was sitting beside a guest of the restaurant, sharing a table, a small place, and after 30 years I found something new. Recommended, I decided to try “Kakiage”, a very popular form of Tenpura in Japan but here it is prepared differently.

This dish is made with small shrimps, deep-fried and served with cold mori noodles /buckwheat noodles/. I consider this an odd combination yet it is considered very traditional /according to my guest/but dipping cold into steaming warm is a strange combination as it cools the broth and barely warms the mori noodles.
