Shiromi |katai|

Shiromi is white fish and is often the opening act of a sushi meal. The white fish is delicate and more textural, as the leading edge is often included and it is “katai” which is chewing and even hard. This is sushi of hirame, and I added some fresh wasabi and some sea salt, no shoyu.
