Knifed Bottarga – video

The idea of using a short serrated knife rarely crosses my mind, however these kinds of blades are very sharp and useful. Caution is noted and precision cutting is complex unless you master it as you can see. Cutting with a short knife requires a sawing effect, when compared to a longer blade where you can make a single cut by drawing the knife in one motion and one direction.
