Leeks Mark’s Way – video|Tweeked leeks|

I followed Mark into the kitchen to get a peak at how he tweeked the leeks added to the spinach salad. He grabs a leak, cuts it, fries it to perfection, then adds into the baby spinach salad, adds a finishing touch of dry miso over the leeks and hand mixes it. The final touch is salt, a contrast to the miso, yuzu and virgin oil.
