This is one of the best slices of tuna I’ve ever tasted. It had some chewing edge to it (a slight hint) and an intense depth of taste, finished with the perfect balance. You can see the hues of red transition from light to dark indicating the fat content which was soft and not exaggerated by any means. The contrast of chu-toro when it is of this quality is extraordinary – just outstanding!
