Matsukawa Exquisite – video

I adore this chef, he is elegant concentrated and understands his trade. You see the chef preparing Zuwai kani, or as he calls it queen crab. When we think of crab we think of Hokkaido but the snow crab fishing season in the Sea of Japan is open from November and kani dishes begin as of now. Known as the king of winter cuisine in the North Kyoto off the seashore of the Tango Peninsula, you find some of the finest crabs named Taiza kani.
