Saba Tsu @ T.

Readers are getting bored with seeing saba, yet each fish has a slightly different hue due to its diet and curing process that takes place at Mr. T’s small empire. The fish is salted and they a tsu (vinegar) bath to give it a wash and a final sweetness that lingers on the palate. The marination is precisely done the same way each time and the penetration of vinegar and salt cure-all depends on the fish itself, i.e. size, flesh, fat content, etc.
