Tea Chiffon Cake

You may already know but the Japanese used have a taboo about eating eggs, mind you that was a few hundred years ago. The chiffon cakes, made with egg are among the very best on planet earth. I remember when I first encountered a Japanese baker in Paris who worked for us, and she made sponge and chiffon cakes that would knock your socks off. Thanks to the Portuguese who taught the Japanese about the use of eggs in baking, (16th Century) we have the evolution of the very best cakes right here.
