It was outlawed as far back as when the first time chicken flu role out in Japan 10 years ago. But since then they are permitting Chinese chicken and Thai chicken into Japan. I am not sure how strict the controls are but when it comes to raw chicken, namely toriwasa, it is still forbidden yet served, but Jidori or other domestic birds are used.


Whenever I eat toriwasa I always put the wasabi on the side and use it as needed. It is difficult to mix it in evenly. This toriwasa is cooked at boiling temperature for less than 20 seconds and then cooled off under water and plunged into ice water.
