The tuna fish is taken by hand cart and laid to rest before being hacked apart in the tsukji. It feels strange when I see farmed fish with their brains drilled open, a core of cranial is drilled out to maximize the fish’s freshness. They are treated like corpses in a war, expression of their final fate, mouth open and still. They are ready to be sawed and cut apart so they can satisfy the demands of sushi guzzlers.
