Green Amaranth @ ToThalassaki

Imagine the best green in Greece and this is it Vleta. It is an excellent substitute for spinach, amarantus is often cooked like spinach and eaten all over Greece. Now imagine you take it raw, cut the stems and take the leaf and roll it with prime raw beef.

The evolution of food happens like this; friends around the kitchen counter, talking, sharing and picking up fresh garden greens in one hand. I am cutting raw beef, and the inspiration comes.Thanks to Adonia chef of ToThalassaki, her creation is rolled up in a split second and the end result is a superb raw combination. /bravo/
