I post about sushi because it is an intimate food, the details are very so ever-present and hard to understand, yet so easy once you get it. I hope you enjoy this photo_it is one of my favorite fish dishes.
Just think about the process, the fish is fresh from the Japan waters, it comes express (the same day) by overnight flight (the last flight of the night) and then it is then in the market of Tsukiji by 04h00. The chef rides his bike 06h00 (wee hours) and prepares it for his lunchtime clients. It is very prefect and as we say “gorgeous”.
