Truffles are white and this truffle is indicative of white truffles from the north of Italy, and not necessarily Piedmontese. Truffles are not always the best from the hills surrounding Alba, yet buyers are willing to pay more per kilo – this is always the case but there is no guaramtee on location unless you find it yourself.

This truffle requires a few more days more to mature as a living organism yet had the most incredible aromas we have ever experienced improving with time and the coloured changed to a darker color.
