It isn’t often I have feedback I publish, but I thought this was interesting to share; funny that you mention donkeys. As you may know, we have a house in Piemonte. In the Monferrato to be precise. Our neighbouring village is called Calliano and they are famous for their donkey meat. Each year we go there to the local sagra and eat donkey agnolotti, donkey salami and braised donkey meat. We find it quite delicious. A little sweet, reminds me of horse meat which we eat in the region in Germany where I grew up.
