40 years, 9 tables, and 22 seats, Vini da Arturo is moto particulari in a good way, and if you are a fan of saor, its worthwhile a visit. This dish of Venice is a typical example of its traditions, immersed in flavor, a sour sauce eggplant with ‘pinoli’ (pine nuts) and oversized sultan raisins.
Or the pork saor which is soaked with vinegar after being pan friend and finished at the table, hand cut by the chef Ernesto. It is an extraordinary cutlet, and don’t begin to shrug your shoulders, it’s an amazing invention.
So why the vinegar, and no doubt it is considered anti-bacterial, or the enzymes to help digest, or simply sour is added flavor. Either way, it is incredible and even if I am not a pork lover, I can say yes to trying it.
