Sea Urchin @ Tinos Thalassaki

The smell and taste of the sea, the juices of the urchin, a hint of salt melds the eggs of these delicate shells spiked at the seabed.

The idea of taking urchin, known as Achinos and slicing them open is not as easy as you think unless you have the right tools. I dream of fresh roe hidden in a vessel under the sea and sharing them is one of those things you do, it is the union of friendship dipping fresh bread into the roe’s water and catching the juices.
