I get excited by the size and who wouldn’t but summer truffle in Italy is fragrant at best ~ a nice image of a tuber, yet a let down on taste if compared with winter truffles.

Italian Black Summer has a rough-tough alligator like skin-like, covered with small diamond-shaped spikes. When mature, the truffle has a pale grey flesh and white marbling that does not change color when exposed to air. It has a rich woodsy aroma with flavors of garlic, wild mushroom and earthy hazelnut undertones.
