We all crave purity in cuisine and simplicity but the two are not always synonymous. I travelled to amalfi and found the most amazing tomatoes, those which make you think twice when you eat your next tomato. I cannot write stories about tomatoes but what I can say is: smaller are often better, more concentration of flavour and datterini is a tomato many crave in the south.

And the tomatoes grown in amalfi are excellent yet there is a line, a geographic boundary where tomatoes change from small to coeur de boeuf: and while these are not the exact type, they are very close. And I was given tomatoes by two michelin restaurants and those handed to us by Gennaro Esposito were mind boggling:
