The idea of sushi during covid can be a scary notion, and now consider sushi outside of Japan and in New York city. Can we go back to the way it was, sushi rice grabbed by the bare hands of chefs without the use of gloves?
At least we know in Japan gloves cannot be easily used, it is quite impossible to convince a chef after 40-years to wear latex gloves, but now a mask is mandatory.
Imagine what happens to the rice if gloves become mandatory, much would be lost by the juxtaposition of the two, a new age sushi made by robots.
