Recently while travelling in Spain we were fortunate enough to have a table at Etxebarri, a restaurant I consider one of those gastronomic experiences you cannot forget. No exaggerating, whatsoever the idea of finding the perfect combination is one of the challenges before any chef, and the balance and perfection was subtlety brilliant. Sightly smoked eggplant and meaty mushroom, a mouthful of perfection beneath the magic hands of chef/owner Bitor are clean-perfection.
