Italy is blessed with fine raw materials and almost everywhere you can find a local shop with sweet cœur de bœuf tomatoes, rosso di Treviso radicchio, artichoke, basil, onions, etc. The photo was a dinner I prepared on a whim for a vegetarian group. Cuisine is made easy here when you leave it up to the raw materials to do the talking. All we miss is some white truffles and a bottle of vino da tavola.
